Healthy Veggie Dip (Vegan too)

This dip is delicious and counts towards your vegetable quota for the day. Whats not to love about that?!

Ingredients

1 cup Broccoli

1 cup Spinach leaves (I use baby spinach)

1 cup Basil leaves

1/2 cup walnuts

2tbsp of Olive oil

1/2 White onion (Caramelised)

1 Garlic clove (minced)

Juice of half a lime

* Option to add water for a smoother consistency

* option to add Nutritional flakes for a cheesey additional taste

* salt and pepper to taste

Method

1. Steam the broccoli until bright green and cooked

2. Caramelise the white onion then add garlic until cooked

3. Add all ingredients in the food processor and blend

4. Option to add some water if mixture is too dense or you prefer a dip smoother

5. Add salt and pepper to taste.

6. Option to add nutritional flakes for a ‘vegan cheese’ alternative
