Blueberry and Coconut Chia Pudding

Great for breakfast or dessert!

Chia seeds are high in omega 3’s and soluble fibre. When grounded in the blender it helps the omega 3 oils to be bioavailable so I prefer to soak and then blend with fruit in the morning. Enjoy!

 

¼ cup chia seeds

½ cup water

½ cup coconut/almond milk

1 tsp. desiccated coconut

3 drops of ‘sweet drops’ stevia –hazelnut

100g Frozen blueberries

Juice of ¼ lime

  1. Combine chia seeds, water, almond/coconut milk desiccated coconut & stevia and soak overnight.
  2. Once chia seeds has set to a gel like consistency,  add to blender with a handful of blueberries and lime.
