Banana, Buckwheat and Cinnamon Chia Pudding

 

 

This chia pudding recipe is very similar to what I have posted previously, this time I am using Banana. This one is my Favourite!

¼ cup chia seeds

½ cup water

½ cup coconut milk

1 tsp. desiccated coconut

3 drops of ‘sweet drops’ stevia –hazelnut or 1 tsp of honey

1 Banana

1/2 tsp Cinnamon

OPTIONAL: Buckwheat groats

 

Method

1. In a bowl, mix together chia seeds, water, coconut milk,  desiccated coconut & stevia and soak overnight.

2. Once chia seeds has set to a gel like consistency,  add to blender with the banana and cinnamon

3. To serve, sprinkle some buckwheat groats on the top for some crunch
